I bought a package of Costco pre-sliced pork bellies (about .5"-1" thickness)...i.e. super thick bacon. Any recommendations on recipes. Last time I did this I used an Asian marinade for a Ramen hack where I make the Chashu with them. I'll still do some that way but I have enough to try one or more other ideas. Just curious if anyone had anything they really liked to do with pork belly.

I cubed it and dusted with pig candy rub, smoked at 230 for a couple hours, then rolled it in bbq sauce with a tablespoon of apple cider vinegar and cooked it on the smoker at 375 till it crisped up a bit.

Cube it, cover in your favorite rub, smoke at 275 until it hits 195 (about 2.5 - 3 hours), toss it in more rub and some bbq sauce, put in an aluminum pan, cook another 45 min to an hour.

Easily one of the simplest and yet best damn things on the planet that I cook.
