What do yall do with your leftovers?

While I love a turkey sandwich, family gets bored of them.

Had a friend who would mix it in with white sauce over pasta. Was almost as good second time that way.

Gumbo hands down. Hopefully mostly dark meat leftover. As much as I ***** about Turkey, I'll admit that the carcass makes a great stock for gumbo and if you're frying a Turkey the oil is perfect for roux.

Next best option is Mole Enchiladas followed by Turkey a la King over herbed biscuits

Flautas. Dice up left over meat, use as filling in a softened corn tortillas, roll, deep fry until crispy. Top with guacamole, mexican crema and crumbled queso fresco. Serve with a good salsa verde.

I dip pieces in buttermilk, coat with flower, and lightly fry. You only have to lightly brown the batter; the turkey is cooked.

It tastes great, and is a great way to use up the turkey.

Made turkey and dropped dumplings.

Alton Brown's recipe for a choux type dumpling that you snip one-inch pieces out of a baggie into simmering broth.

The turkey was smoked, so that added something real nice.

I'm gonna go ahead and revise my previous statement. We hosted for the first time in years, thus the first Turkey Gumbo in years.

No reason to ruin a perfectly good Gumbo by using Turkey. Turkey is like .68/lb. Throw the ****ing leftovers away.

In other news, Dziuk's meat market in Castroville makes legit andouille. This is the first time I've found andouille in Texas that is indistinguishable from the real deal. Plus a little parissa for the rider home
