My daughter is entering some cupcakes in an open competition at her highschool. We are searching for cupcake recipes, and seeing if anyone has any ideas.

Post a recipe, or a link, if you have one that you think has a shot.

Caveats:

1) Age appropriate, please. No alcohol themed cupcakes
2) My girl is great at baking. We're not going to be making sugar sculptures, but can be fairly advanced.
3) The more scratch ingredients, the better. Starting with a box of cake mix is ok, but not preferred. No canned icing, that needs to be from scratch.

Any help is appreciated!

Here's a place to go to look for inspiration.

One thing that might be applicable is where are you and what's a regionally known dessert, and start from there to make something on your own. Such as a Texas sheet cupcake. Chocolate cake with homemade chocolate frosting and pecans. Every time I make a Texas sheet cake it's super easy and super tasty, the results to effort ratio is great.

I don't have a recipe but one idea since we're close to the holidays would be a pecan-pie inspired cupcake. I would make a traditional spiced cake and top that with a cinnamon butter cream and candied pecans or pralines. I'm not big on pumpkin pie, pecan pie is my jam.

for great scratch cake recipes, I like thecakeblog.com You can mix and match cake and icing to come up with the combination you want. I would have her pick out something she would really like to eat herself. For cake and cupcakes, the biggest tip I can give you guys is to not overmix it. Mix just until the ingredients come together. If you overmix, the texture is going to be gross.

ATK has a "really" good chocolate cupcakes recipe. You put ganache inside them.

Add a pinch chocolate cupcakes and her vanilla buttercream frosting. I am not a fan of chocolate cake and I love these. Easy to make but all from scratch.

My husband says he doesn't like chocolate cake either, but he loves this chocolate cake. I replace the hot water with coffee and it helps bring out more flavor. It pairs well with all types of frostings.

Probably similar recipes as Just a Pinch calls for instant espresso powder (that I got at TJs)

I think carrot cake is risky for a competition. If the judges don't like vegetables in their desserts, you're screwed.

If you're making a carrot cake and it tastes like vegetables, you're doing it wrong. In a well made cake like the recipe I posted, they're hardly noticeable for anything other than texture.

She wound up going with Mexican chocolate cupcakes with mini churros. They had a pinch of cayenne to bring a little heat. They are very good, love them with milk.

Got 2nd place out of 8. The winner had much, much better piping skills than my daughter, she deserved to win just because the cupcakes were beautiful.

I will ask her if she will share it. I don't have it. She combined a couple of different ones she found online.

Update.

I still owe recipes. But, my girl won "most unique flavor" at the district level. One of 9 trophies out of 60 entries, and that was level 2 after each school only brought 6 entries.

Proud papa.
