Dry aging meat

Anyone have experience dry aging meat at home.
Did you build your own dry aging fridge? Or just buy one?

Any thoughts/tips?

I used the Sausage Makers dry aging wrap (no vacuum seal needed). Aged a prime strip loin 38 days and steaks were amazing after trim, sous vide and sear.

Next time would go a little longer as I was looking for a little more funk.

I typically wrap in cheese cloth and place on a rack over a pan. Change out the cheese cloth once a week-ish until you're ready to pull it:

I have also used the umai bags with good success.

I didn't wrap with anything and they turned out great. Foil pan with a rack and a bunch of salt in the bottom to help with humidity. I also went with sous vide then seared over a hot charcoal grill.

Outstanding. This was back in 2017 but I believe one of the best steaks I've made at home.

For the actual aging, I forgot I also had a thermometer to monitor air temp and air circulation fan to assist in drying.

Here was the aging setup:

Anyone ever dry age in a mini-fridge? I feel like all the ones I've ever used have always had moisture control issues. Would be really scared of the meat going bad - but even in a full size fridge I'd be scared of screwing something up and ruining a nice piece of meat.

The salt in the pan really seemed to help with moisture. You could also use a desiccant pack. With that said I tried and mine wouldn't fit in my mini fridge so make sure you know your dimensions.
