Maybe Kenji's channel is to SeriousEats for you, but it's good.

No nonsense technique, with some easier but super solid recipes. Also does awesome research videos with a journalistic approach and always interviews different experts in the field he's researching instead of voicing his own opinion.

YouTube veteran. This dude was a big influencer in my earlier stages of learning to cook.

I have several food entertainment channels I enjoy, but I don't think that's what you're asking for.

I like food wishes and the babish videos. I like kenji as well but his lack of editing keeps me from watching many. The first two edit well and keep the videos to the point without a bunch of dead time looking for a spoon or ingredient or whatever.

I generally agree with this but sometimes Kenji will drop interesting little nuggets of info to fill the dead space in his videos.

Also like Babish for the straightforward approach and tidbits of humor.

I like to look up the menus at high-end restaurants across the country for ideas. It's usually not overly difficult to reverse engineer a recipe and you'll get ideas that are typically more creative than recipe sites

Found this channel recently. He is a little quirky, but he edits his videos well and goes through everything very quickly. He was a chef at Uchiko in Austin.

Another vote for Weissman. He's a goofball but his videos are very well done. He also knows what he's talking about.

I really want to like Weismann because he seems to really know what he's talking about, but the editing and goofiness are a little too distracting

Only guy you're missing is Chef Tom with ATBBQ. Other than that, this is my full list as well.

Bearded Butchers

More of a meat processing page, but they do make sausages, brats, hot dogs, and other various meat products, grilled, smoked, whatever. If you want to see how to butcher and process any animal or see where the steaks come from that you buy at the store, these are the guys to watch. They are absolute masters of their craft.

He's quirky, but his recipes have been pretty good. He tends to go overboard a bit.

Ethan Chlebowski is a pretty good newcomer.

I think I've learned the most from Kenji. I like Weissman but get kinda annoyed with his "But Better" series...like yeah no s*** you can do it better, you're a professional chef doing one meal at a time, these restaurants are using high school graduates and serving hundreds of ppl per day...

Chuds BBQ is s pretty good follow. Bradley Robinson is part of Leroy & Lewis BBQ here in Austin. He covers a lot of things outside of standard bbq fare and keeps it informative but also entertaining. He is also a fabricator who builds unique cookers outside of the standard pipe or tank offset.
