I was buying a brisket for tomorrow at HEB and they were sitting next to cross cut pork ribs... I'm sure they're not new - but I hadn't noticed them before.
Any tips on cooking these? I was planning to cook them similar to normal pork ribs (dry rub, indirect around 250/275, etc).
