I can use perforated aluminum foil, but there has to be a better way.

What kind of fish?

We do all our salmon and cedar/alder boards (board soaked for an hour). Comes out nice and Smokey and the skin stays, mostly, on the board. Leaves the grill clean.

Use a fish grilling basket
Yeah, well, sometimes nothing is a real cool hand

You can buy perforated grill pans. Spray them with Pam or use paper towel to coat them with oil and you'll be good to go.

If no skin on, it does not go on the grill, for me.

My family loves to eat the crispy skin. Just cook low enough you don't have to flip.

I've used these before and they're awesome.

Grill Mats

Other than that basket or super heavy duty hamburger flipped that slides right under them

Ask the fish monger to cut you a whole fish and leave it on the "half shell". Definitely do this for any fish you catch that you want to grill. Otherwise, basket or cast iron a la plancha.

Clean your grill.

I dredge the skin side in a little corn meal. That typically stops it from sticking.
