That looked great, but I lack fresh sage. It's on my garden list for next year.

Ended up with a butter-wine sauce with garlic and shallots.

It's the real deal when it comes to cooking the cuisine of Piedmont. Be prepared to drop some money for the ingredients, because it's pretty damn important. Most of the recipes have few ingredients, so quality of those ingredients is a big deal. The Gorgonzola cream sauce is stupid simple, but holy ****, it is amazing over fresh pasta.

Porcini mushrooms ain't cheap! I saw where you could buy 4oz for not too horrible a price. Do they keep well?

I bought 3oz for $15 on amazon. That's a LOT of dried mushrooms. Once they're rehydrated, it's probably 2 pounds.
