I don't have an insta pot, just a plain old crock pot.

I make a pretty good pot roast and have used it for red beans and rice, stews and soups. Don't prefer it for chili.

What else can I do with this thing?

Green chili pork...I don't have the recipe in front of me but it's pretty easy. Just a pork shoulder or butt (sometimes I use the pre cut "pork for carnitas" from HEB), small to medium diced white onion, large jar salsa verde, cilantro to taste, add pepper(s) for extra heat if desired. Throw all that **** in, cover and let the magic happen for 6-8 hours on low. Use the meat for tacos. I retain the leftover juice to make rice and/or beans.

If you are looking for something a little different, doing a turkey breast in it is pretty good. Sometimes I'll throw a cinnamon stick in there, but you can really put anything in with it. A little thyme or rosemary with the turkey is pretty good. I've done a whole chicken in it too, and stuffed the chicken with onions.

INGREDIENTS
3- pound chuck roast
1- ounce packet of dry ranch seasoning mix
1- ounce packet of dry au jus gravy mix
6 tbsp unsalted butter
1/4 cup water
5-6 pepperoncini

Chicken tacos

3-4 chicken breasts
rotel
taco seasoning
ranch seasoning

Combine it all and cook on low 6-8 hours. Shred chicken and serve in tortillas with your favorite taco toppings.

Not gonna lie, when I get lazy or don't have time to grill/smoke ribs, I've been throwing seasoned pork ribs in the crock pot and then covering in Mark's BBQ sauce (any sauce of choice will work). 3-4 hours later I have tender, tasty ribs and virtually no cooking effort. Perfect for gamedays.

Oh, yeah, baby! I have been wanting to have this pot roast for a really long time. However, I just haven't had the chance. I'm doing Atkins for a short-term and this would be perfect on it. I'm making this tomorrow.

Just going to say, that if you have any leftover mississippi pot roast, it makes GREAT filling for enchiladas with some kind of verde or cream sauce the next day.

I've made this numerous times for parties and it's always gone at the end of the evening. When making for home it's awesome for potachos!

my wife does the same thing, but she takes them out and puts them under the broiler right before serving to crisp them up a bit.

Haven't been happy with other crockpot pulled pork recipes but I'll give this one a try soon.

Here's what I do for pulled pork and it's ridiculously good.

Just liberally rub a 4-5 lb bone-in Boston butt with Fiesta Pork Rub, drop it in the cooker with about a 1/2" water, top with fresh sliced jalapenos, and let it go

8 hrs on High
12 hrs on Low

You'll thank me later

A few things I'd change.

Roast fat side up. (I wasn't paying attention when I put it in the crock)
More water. At least 1/2 cup.
Way more pepperoncini. 5-6 didn't work. The bites next to a pepper were terrific. Needed more.

Agreed on the pepperocini. I also alternate the au jus gravy mix & ranch mix when sprinkling it on the roast.
What about slicing the pepperocini's and distributing through the roast prior to cooking. Feel like the juices will get all up in there better, but don't want to over power the dish. Also, more bites with pepperoncini in them. thoughts?

I had planned on that too. I'm not worried about it overpowering - based on my first try it would take a WHOLE lot to accomplish that.

This is one of our favorites, you can serve in tortillas or buns or to save carbs lettuce for wraps

Cheddar Ranch Chicken

Ingredients
3 boneless chicken breasts
16 oz cream cheese
2 packets (1 oz each) dry Ranch seasoning
8 oz bacon cooked crispy and crumbled
1 teaspoon garlic powder
1 cup cheddar cheese shredded

Instructions
In a slow cooker combine chicken, cream cheese, Ranch seasoning, garlic powder, and cheddar cheese.
Cover and cook on LOW for 6-8 hours or on HIGH for 4 hours, until chicken is tender and it shreds easily.
Once the chicken is tender enough, stir it with a large fork or spoon, so the chicken shreds and gets combined with all the ingredients.
Add in crumbled bacon and stir to incorporate.

Serve on buns or tortillas with extra bacon on top and chopped green onions.

No, liquid but if it seems to dry you can add a bit of broth or milk. I wouldn't add it to start though.

This is another chicken dish I do, my oldest Aggie made it a lot his 5th year.

Fiesta Chicken

Ingredients:
3 pounds boneless chicken breasts
1 (15- ounce) can black beans, drained
1 (15- ounce) can corn, drained
1 (10- ounce) can of diced tomatoes and chilis (such as RoTel), drained
2 (1- ounce) packages taco seasoning
1 (8 ounce) block cream cheese, cubed
Instructions:
In a large slow cooker combine the chicken, black beans, corn, tomatoes, and taco seasoning.
Cook on high for 3-4 hours (or low for 6-8) or until the chicken is fork tender and shreds easily.
Add cream cheese and cook for an additional 30 minutes.
Using two forks, shred the chicken and stir all the ingredients to combine.
Serve warm.
