Thought this might be an interesting thread. What is the best bite/dish you've ever had.

Best bite ever for me is probably the oysters and pearls at French Laundry.

And as I Houstonian, my favorite bite in Houston is probably the Amberjack with foie gras at Kata Robata (although the walu walu at Uchi is a close second).

The best thing I've eaten was the ribeye with mole at Topolobampo in Chicago.

Interesting. I've eaten at Commander's a couple times but only had the turtle soup. I'll have to give it a try.

My favorite NOLA dishes are the Louisiana cochon at Cochon and the Manhattan omelette (with a chocolate cherry freeze) at Camellia Grill.

Revolution's "Death by Gumbo" is awesome. Legit.


But...

The best singular bite I've ever had was the Black Truffle Explosion at Alinea. It's literally one bite, as it's black truffle "juice" in a ravioli.

Perhaps the best dish was the white trailer risotto with brown butter at Alinea.

Too many honorable mentions to name.

The A5 wagyu filet seared tableside on a salt block at B&B is up there as well.

Commanders is always good Gumbo but does have range, sometimes it's in the best category and sometimes it's really good. In the most pretentious way possible they nail mouth feel

It might have been the snapper - I don't remember the exact cuts - but uchi has given me some of my most favorite bites of food.

I believe for me it was a foie gras bon bon with a candied hazelnut crust and a pear ginger syrup center in the Kitchen at Eleven Madison Park.

My fav "everyday" bite is the yellowtail ngiri with foie gras and asian pear jam at Soma in Houston.

These are from Bliss in San Antonio. Great great place. If yall ever go there get these.

Momo***u Pork Bo Ssam (specifically my first bite with the whole 9 yards of condiments on it - lettuce wrap with crispy pork topped with ssam sauce, ginger scallion sauce, kim chi, pickled chiles, and a raw kumamoto oyster, and probably some other stuff am forgetting)

It's been years since I've looked, but Central Market in Houston used to carry them on occasion.

When they're on, char broiled oysters at dragos in Nola. The problem is their lazy service lends to sometimes luke warm oysters.

I saw some at a Farmer's market in Tacoma late June when I visited family there. A Mushroom vendor was selling them. They might have been white tho... i'm not 100% sure.

Even better! But be careful. There are some bull**** Chinese white truffles that people pass off as Italian truffles from Alba. You need a trusted source.

Funny...this post immediately make me think of a truffle mac and cheese that I had at a wedding in Aspen and lo and behold, it popped up on my facebook memories today. It was incredible and served in single serve bites.

first thing that came to mind because of recency is the wagyu sous vide short rib bite pictured above at uchi

also, pretty much any decently prepared soup dumpling.

another that came to mind: the lobster and bacon deviled eggs at pappas bros. steakhouse.

Those deviled eggs are legit.

One of my favorites was the truffle risotto at Bouchon.

Prob my favorite in Houston, also Pappa Bros, was a foie gras topped filet.
