I have been looking through some old family recipes from the Bohemian side of my family. Some recipes call for duck lard. Does anyone have any idea where this might be bought. I'm in Richardson. I tried the Hmart in Plano to no avail.

Whole Foods has duck fat.
Central Market, most likely, too.
Imagine you can search store specific for inventory.
It freezes to keep long term.
Yum.

Goose fat is better then duck fat. You can find goose fat at same type places. Or cook a goose and keep the fat. It can be frozen.

I've bought duck fat at HEB even. Its pretty popular in cuisine lately...Duck Fat fries, etc. are all the rage. I bought mine to fat wash Rye Whiskey.

HEB website shows 2 brands. Searching w/College Station zip code shows one is available at the new Jones crossing store. Both are at several stores around Houston.

Looks like you can even find it at some Wal-Mart stores!

I didn't even know butter could go bad. How old would it have to be?

I'm not sure how much butter we use, but I could easily see a pound every 1-2 weeks
