Anyone made them? Recipe in his book and all over online and they seem simple enough, but I have one question looking for help on.

He has you add the brisket prior to cooking and cooking with the beans. Problem is, should timing of my briskets be on, I won't have the brisket ready. Curious thoughts on the following:

1. Just add one I slice the brisket.
2. Buy a small amount of inferior brisket from a local BBQ place.
3. Use another meat like sausage
4. ????

Thanks for any help!

I save trimmings off of my briskets and freeze to put in beans.

I remember reading about some place that made their beans in a deep lasagna dish and put it in the smoker under the meat, so the rendered fat would drip down into the beans. Haven't tried this method but it sounds awesome.

That works for the future fine, but not for my big party I'm hosting Wednesday.

Maybe buy a fully cooked disgusting brisket at HEB and cut it up? Feed the rest to the dog.

No HEB in San Diego, but I do have a few BBQ places that could suffice.

Just make the B-1 83 beans. Your people will go insane over them.

I've made them a few times and that's an option. Was just thinking of mixing things up and going a little more traditional.

Just go get some cheap bbq for this.

I will add that the B1 83 beans with pork belly burnt ends may be one of the best things on Earth.

I just use bacon instead of the brisket. Just be careful with the amount of salt you use if you have the bacon also

Those beans are pretty good but his potato salad is hot garbage. Like potatoes floating in mustard

For the brisket for my beans, I usually stop by Rudy's (there's one close to my house) and grab some moist. Not a big Rudy's fan, but this is a perfectly acceptable use for their brisket.

Sounds like standard potato salad

It literally tasted like I opened my mouth and sprayed yellow mustard in.

That is sad, because it is pretty easy to make a decent potato salad.

Does he not use mayonnaise to temper the mustard?

Update. I ended up grabbing some country style pork ribs, cut into cubs and rubbed them all over with my pork rub. Smoked and threw in the beans. Beans turned out pretty good. More my style than the B1 beans, although I like both. B1 seems to please a crowd a bit better. Or, my brisket was so good people didn't care about the sides.

Really very little. It seems like half mustard half mayonnaise

Do you add garlic? I'm a bit surprised it doesn't call for garlic?!

No garlic. But here's the response I got from the guy I did it for:

Everything was great John. But.... the beans turned out to be the BIG hit. A number of folks were going on and on about how good and flavorful they were. They were awesome.

I added garlic. About 5 cloves worth of fresh chopped garlic. I added it with the onion step. I'd do it again. They were good beans. I like that it calls for a ton of cilantro. A lot of recipes don't call for as much. Cilantro makes a big difference.

Bush's baked beans, which are the base of the B183 recipe, already has garlic powder in it.

BTW, I'm guessing the addition of the clamato juice is to get the umami of the MSG into the beans.

I use his recipe exactly other than the brisket.

Instead I use 1 smoke ham hock and a few slices of peppered bacon. Also add a jalapeo in there. These taste amazing.

I am not a huge fan of beans that are tomato based, so these hit the spot.

Is it Bush's baked beans or Bush's pinto beans in that recipe?

It is the pinto beans. Looks like I misread it. My bad.

I went to a local BBQ and asked for barks and edges to use in my beans once I ran out of my frozen inventory of brisket pieces saved to make Franklin beans. It worked just fine.

My wife and I make these all the time now. We're always asked to bring beans to family events now cause everyone loves them. They ask for "those Aggie beans" since I tell everyone I got the recipe off TexAgs. I love it.

Made B-1 83 beans this afternoon, they ARE special.!!!! The only thing I changed was cooking the bacon in separate pan, as I did not want that much bacon drippings/grease in the beans. Of course still used some of the rendered grease for cooking the onions and garlic, but added the bacon when adding all the rest of the ingredients. Also, only used 2 Serrano peppers..and one jalapeno. They were adequately spiced with that much pepper.
It is amazingly, delicious.....thanks for sharing.
