Stove-Top Griddle Foods?

Moved into a new house and the stove has an oblong 5th burner in the middle. I'm assuming that's for a griddle. What do y'all use that for? I know the standard breakfast stuff, but what else is it useful for?

I have several antique cast iron skillets that I've used for that stuff in the past. Why is the griddle better? I don't have one right now, but I will get one if I should.

And to contribute to the thread, sea scallops on the griddle are so much better than on the grill in my experience.

I love a good flat top burger. I like a griddle when I need to flip some, because no sides make that easier

I put large pots (soup/stew) and so on there as well. First house in College Station had a stove with a griddle and we made pancakes often.
