The green chili pork verde instapot recipe. We'll see how it is in about 10 min.

I made rice with a bunch of random veggies.
The pot stickers I served them with were not homemade, but I did steam them myself.

It was simple and had good flavor (even with fish sauce...you seriously can't taste anything weird). That said, it felt a little bland. Tasted very similar to this Denver chili I've made before that was posted on this board. The instapot was easier no doubt, but I'd adjust some things.

My post from a while back:

Quote:

I basically just used this recipe but substituted fido's green salsa recipe (and added a tomatillo or 2) for the 10 oz of green salsa.

Green sauce:

Trim stems from 6 jalapeos, 10 serranos, and peel 2 large cloves of garlic. Simmer in salted water until tender. Hope you've got a good vent hood as this will make some serious fumes.Transfer peppers and garlic into a food processor and pulse a few times adding enough of the reserved water to reach your desired consistency. Salt to taste (but like I said, I added a couple tomatillos)

And used it in this recipe:

Denver Green Chili http://denvergreenchili.com/award-winning-recipes/champion-green-chili/world-champion-green-chili-2008/

Edit: Forgot to add that I didn't have green chili powder. I found a seasoning at Whole Foods that had green chili powder as a primary ingredient along with cumin, garlic, salt, etc and used it sparingly. When i make it again, I'm going to order the actual powder. Which will probably be next Saturday for a cookoff.

Had the dough shaped and ready, and then found out my sauce had gone bad.

Oh well.

Topped with pepperoni, bacon, onions, mozzarella, and baked.

Sliced, and then topped with a little tomato and basil.

Pretty solid.

That looks awesome! Great idea to use the pressure cooker

Assuming you're just gonna throw all the pork ingredients in the cooker then do the polenta separately?

That was my plan, reduce the amount of liquid into the pressure cooker. then when it is done, reduce it on the stove and I may add a corn starch slurry to finish it.

Make the polenta while that cooks

I may have to give that Denver green chili a try. I remember going to that diner in downtown denver and loving it.

I have buddies that still talk about that chili. It was ridiculously good. Made it one other time with pulled pork that was smoked and there were too many competing flavors, imo.

Anything special to the dough recipe?

And how hot did they keep their ovens?

I just finished a small test batch of pizza dough made with biga.

The biga gives me a somewhat bland tasting dough, so I added sugar in to see if it affects the rising time or taste.

No effect on the rising time, and no difference whatsoever on the taste.

I covered half the dough with garlic powder before baking, that side had a nice zest after it came out of the oven. Rest of it has a slightly sour taste, which you expect from and aged biga.

I'll probably eat it with olive oil and balsamic vinegar later tonight.

This is why I don't compare my cookies to yours, it's seriously damaging to my self-esteem.

Are you going to dig out the middle of those loaves, and eat the broccoli and cheese soup in a bread bowl?
