...or turkey fryer burners and cast iron pans. You can make this indoors, but you better have a restaurant quality vent hood, because there's going to be a lot of smoke. It's a great way to use one of those pork ribeye roasts that you can find at HEB. Don't worry about toasting the spices. Where we're going, they're going to toast themselves.

Puerco a la plancha
Adapted from the New York Times

1 1/2 pounds pork ribeye roast, cut into 3/4" cubes
Salt
pepper
2 teaspoons cumin seeds, ground
2 teaspoons coriander seeds, ground
2 teaspoons pimenton (paprika), sweet or hot
1/2 teaspoon dried oregano
2 garlic cloves made into a paste with a 1/2 teaspoon salt
4 tablespoons olive oil
Vegetable oil
Lemon wedge

Combine the cumin, coriander, pimenton, oregano, garlic, and oil. Mix to combine. Add the pork, and toss to evenly coat. Season to taste with salt and pepper. Let this marinate for 30 minutes minimum or a couple of hours. When ready to cook, skewer the meat, leaving room so the pieces don't touch. If you want to be really picky, skewer the fatty pieces fat side side down.

Heat your griddle/pan until it's screaming hot. Add a thin film of oil. It needs to be really, really hot. When it starts smoking, wait 30 seconds (you're not going to set fire to anything, I promise), and then add the skewers. Cook for two minutes. If the fat that is turning into an aerosol is catching fire around the edges of the pan, it's hot enough. If that fire is spreading into the pan, turn down the heat, because your about to start a really big fire. Check them after a minute, and if they're really seared hard (almost to the point of black), flip them. If not, cook them another minute. If your pan is hot enough, the fat will have rendered out leaving some crystallized fat cap. Once you flip them, cook on the other side for a minute. Remove from the pan, and try not to eat all of them before you get inside. Serve with a saffron rice pilaf and lemon wedges.
