Some freaks put eggs in theirs. Vile people.

Others use barbecue sauce and mayo instead of mustard and mayo.

I make German potato salad fairly often and I prefer it. Vinegar, bacon, onions, and Dijon mustard, no damn mayo.

Would love to see this recipe.

I will post my ranch dressing recipe, but it uses a bottle of pre-made dressing. If you have a blue cheese from scratch, I am very interested.

I will not put measurements, as I don't really measure here.

Ingredients:
Red skinned potatoes
Ranch dressing
Bacon
Onion
Fresh dill
Garlic (optional)
S&P
chicken stock (best if home made)

1) Cut bacon up into little pieces. Cook the bacon until done but not crunchy. Remove bacon
2) Saute diced onion in bacon fat. I usually use one small yellow onion for a 4lb bag of red potatoes. YMMV
3) In a separate large pot, cook the potatoes (quartered or so, I would say two bite chunks) in chicken stock and water. I use a quart freezer bag full of stock, and add water until potatoes are just covered.
4) Boil potatoes until most of the liquid has evaporated. Do not stir while cooking. You should be left with very soft potatoes and some concentrated water / stock at the bottom of the pot.
5) Add ranch, or home made mayo with ranch dressing seasonings, bacon, onion, dill, garlic powder and pepper. Be careful about salt, it is a lot of potatoes, but the ranch could be pretty salty depending on the brand. Consider adding some of the bacon grease.
6) Fold in ingredients, trying to coat the potatoes without them breaking up too much. You are trying to avoid mashed potatoes here. You will wind up with potato chunks that are about bite sized after folding.

We play around a bit with proportions, but this almost always turns out really, really good.

As for how much ranch, you are not trying to completely coat each potato chunk with ranch, just adding flavor. The end product should look like a bowl of boiled potatoes with a bit of ranch dressing on each and a lot of spices.
