Every year I usually try to add to my library and decided that I'd really like to learn how to make authentic tortillas.

I grew up with a woman who used to watch me and I spent the majority of my young life eating homemade tortillas and I'd really like to be able to do it myself.

I'm not looking for an Alton Brown/Food Network type recipe either. I'd really like something like your tias and abuelas made growing up.

Anyway, thanks in advance. I really look forward to seeing what pops up.

I use the recipe on the side of the H-E-B bag of flour. It's pretty solid!

One of my favorite memories as a kid was the early summer mornings right after school let out, waking up to the sound of the rolling pin slapping the board and smelling fresh rolled tortillas cooking. Bonus when the last of the dough went to sopapillas.

I assume you are talking about flour. These are as good as it gets, (and yes, use lard)

Key to rolling nice flour circles is to roll up the balls of dough and let them sit for 30min or so. Think it lets the glutens come together and they tend to be kinda elastic makjngnrolling easier. Also use plenty of bench flour and turn a quarter turn with each roll.

Depends how many you are making. A dozen corn? probably not. several dozen? Totally worth it. You can wrap the press in some plastic wrap or wax paper if you find that they are sticking

I like the Homesick Texan cookbook recipe for "Houston style" flour tortillas. I couldn't find it online but I did find another of her recipes for tortillas. Ive made these too and they're delicious.
