I'm a huge fan of S&P and primarily cook that way because it's tough to beat the simplicity in prep but for whatever reason, it really gets under my skin when people insist it's the only way to cook.

2 parts Kosher Salt
1 part Granulated Garlic

Simple. Pure. Heaven.

(P.S. Aaron doesn't use only S&P in his commercial cooks... #jussayin)

I like the Salt LIck Garlic Rub. Nice little kick to it.

I use 50% Mexican brisket rub, 25% coarse black pepper, and 25% espresso.

Usually rub it the night before. Turns out great.

I use Pecan logs in a Big Hat BBQ vertical offset that I got on Craigslist.

After experimenting I've found the most liked by everyone is fresh cracked pepper, salt, turbinado sugar, garlic powder.
