Looking for a good cheese enchilada recipe to feed 2 kids and 2 adults. Anyone care to share?
It's no worse than that recipe above that uses tomato sauce. While the canned may have tomato sauce, a true chile sauce for enchiladas does not have tomato sauce - it ain't for pasta.Electrical_Ag said:

True, good enchiladas don't take much time. Other than the tomato sauce (just my preference), that recipe is pretty good and not far from what I do. I just use more chili powder and let it thicken to add the body. Again, it is a solid recipe - I just saw the tomato sauce at first and didn't look closer.wadd96 said:

Always use American cheese on your enchiladas. I did like the sound of your sauce though.
If you are from south of Hwy. 90, you will agree.

Wound up trying Ree Drummond's recipe. She also called for sour cream in the filling. They were good, and it got the job done, but I wouldn't classify that recipe as cheese enchiladas. Will try Och's recipie next time!
