Anyone have any good recipes for cooking dry black beans? I've never really cooked dry beans before and would like to try it but don't have any seasoning recipes.

I go with chicken stock, cumin, garlic, onion, tomato w/green chilis and some sort smoked pork on the bone (ham hocks, neck bones, etc)

Rinse beans, place in a pot, cover with about 2 inches of water (6-7 cups) and boil for 15 minutes.

While that is going, dice and cook 1 onion and carrot on medium heat for about 5 minutes then add 4 cloves garlic and cook for another minute. Add to beans along with 2 chopped chipotle peppers in adobo sauce.

Turn heat to low and simmer for about 90 minutes.

Add handful chopped cilantro, 1 tsp cumin, 1 tbsp tomato paste, juice from 1 lime and 1-2 tsp salt. Cook about another 30 min to an hour until tender.
