Favorite Chicken Salad Recipes/Ingredients

I enjoy chicken salad from time to time so I'm looking to find a solid recipe. In addition to full recipes, I'm also curious to hear what individual ingredients people like in their chicken salad since there is a lot of room for variety and seemingly weird ingredients/combinations (e.g. is there a good "formula"). Lately, I've been trying to recreate a Bucee's version which includes pecans, poppy seeds, and dried cranberries, but variety is the spice of life.

1. For the basics, are celery or onion must-haves for you, or does it just depend on the other ingredients? I've been using red onion recently, albeit sparingly.

2. Do you do anything special for the "sauce"/dressing? Mayo only is bland to me. I've never personally used it, but I see a lot of recipes that call for something with some zip or bite to it like lemon juice or a tangy mustard.

3. What about seasoning? I've never tried fresh herbs, but they sound good depending on the recipe (dill, parsley, etc.). Seen plenty of recipes that call for dried basil, among other things.

4. Fruit of any kind initially seemed questionable to me because family recipes never included it, but I've since seen/tasted recipes with grapes, apples, pineapple, dried fruit, etc. and enjoy the punch of sweetness.

5. As for nuts, again family recipes were always very tame, but I've tried pecans and seen some recipes that call for water chestnuts. I'm sure other options like chopped walnuts would work too. I do like the texture/crunch that the nuts give.

6. Chicken chopped, sliced, or shredded?

7. Finally, what is your vehicle of choice? White bread, croissants, crackers, or something unusual? Any lettuce, tomato, or other ingredients?

I don't use mayo. That is from Satan.

I use plain yogurt.



I like celery, diced apples, diced green onion, and cucumber.


Sounds weird, but the crunch is totally awesome.

Red grapes and pecans.
Garlic salt, pepper.
Mayo.
Finely sliced onion is fine to add. I skip the celery.
Starting with high quality chicken will be important.

I use even parts mayo and spicy brown mustard

Only roasted or grilled chicken, that canned stuff should be illegal

Keep it simple.

Either smoke a chicken or buy a rotisserie chicken. Use mayo with a little Dijon mustard, and garlic, and that is the base to the salad.

Depending on the mood, add something with crunch like nuts, apples, grapes, celery,etc....I rarely add any of these

Season depending on mood - sometimes I do more of a bbq sweeter type blend, sometime go with more of Mexican or spicy blend.

I don't have a recipe, just add mayo and my seasoning blend until I get a consistency and strength of seasoning I like.

not a recipe, but I found the roast turkey salad with cranberries at HEB to be delicious. just a suggestion to try if you want something premade.

Queen Vic Pub in Houston has an excellent curry chicken salad sandwich. really spicy but really flavorful. don't know where you are, but if in H-town, give it a shot.

As with all things mayo involved...Home. Made. Mayo.
It's so easy.

Wide mouth pint jar
One whole egg
Squeeze of lemon
Dollup of Dijon
Salt
Pepper
Top to 10oz with oil of choice (I usually use avocado)

Immersion blend.

Finish with chicken and other **** .

I thought I hated curry. Then I went to Thailand, took a cooking class and learned to make different Thai curries.

Turns out I just don't like Indian food.

chopped boiled eggs
chopped poblano, sweet onion, celery and cilantro
sweet pickle relish
chopped pecans
garlic salt
#32 black pepper
equal parts Duke's mayo and Creme Fraiche for the glue that holds it all together


you can substitute tarragon for the cilantro and walnut' pine nuts or sunflower seed for the pecans

No fruit, no nuts, no eggs! Celery, yellow onion, green onion, fresh parsley, mayo, a tiny bit of brown mustard, pickles, coarse black pepper, Zartarain's, and celery seed.

Great topic. I have never used a recipe and never will. Mine also changes depending on my mood but it is a staple in my house.

Smoked Chicken Only (only reason i make it is when I have leftover smoked chicken)

I go way out there with my chicken salad basically following this recipe. I mix it up some, and I generally use smoked or grilled chicken thighs.. The only negative is the fact the chicken is a reddish/pink color due to the raspberry. If you can get past that, it's really delicious.

HEB's rotisserie chicken recipe is the bomb.

1 Rotisserie chicken chopped or shredded (I like chopped)
4 large celery stalks chopped
1/2 large yellow onion chopped
1 tsp paprika
1tsp chili powder
1tsp garlic powder
2 tsp tobasco sauce
1 1/2 cup of mayo

i also made a chicken "curried" salad -- the last time i made chicken salad which was a while back

Made this recipe a few days ago. Absolutely bonkers:

chicken chopped (meat and bones was cooked to make stock)
celery, chopped
red onion, chopped
garlic, minced
mayo, Hellmann's
horseradish aioli from Trader Joe
basil
Parmiggiano-Reggiano cheese, grated
salt and pepper
nuts, walnuts or pecans
spice mix - green and red chili, zaatar, sumac, chipotle, tumeric, ancho chili and red chili caribi (picked this up a Santa Fe food festival)
