None of it. I am so tired of Hatch! It does not need to be longer than a weekend. The entire circular was only hatch products!

Everyone else must like it though because it just gets bigger every year.

I like being able to buy sausages, crab cakes, tortillas, etc with the peppers already in. Saves time and don't really think to do it the rest of the year.

I tried a sample of a hot dog bun with hatch chilis before I realized it was a hot dog bun. I thought it was strange, but I like the flavor of the chilis. It did seem a little over the top that the entire store was covered in hatch chili this and that though.

This is the time of year I avoid Central market, because all the everyday stuff now has hatch chiles in it. I don't dislike hatch chiles, but they don't need to be in everything.

I usually buy a couple of cases each year... Roasted, peel and seed... And then vacuum pack into usuable packs and freeze.

I bought a little over 1/2 a case roasted, mainly mild but some hot. I pealed, removed seeds, chopped, and put in bags. I measured 8oz bags and 4oz bags. I think it ended up being about 7lbs? It's a PITA to peel, de-seed, chop, etc, about 2 hours of work. Huge payoff though the rest of the year. I'm sure I'm insanely slow, but its something only do once a year other than the occasional roasted jalapeno.

That's plenty to get me through the year. If I'm cooking something where I don't expect the chilis to be critical I'll just buy the cans of chopped green chilis. I use the good ones for soups, quesos, etc.

I just put them in the freezer.
Take the trash out staff.

Pork green chili stew, queso q/green chilis, green chili cheeseburgers,etc.

If I'm making something like a generic enchilada type casserole w/beef, tortillas, 7 lbs of cheddar and chili powder, I'll just use the canned stuff.
Take the trash out staff.

I was having a good day until I learned that it is Hatch Chile Week at Central Market. Now I'm pissed.

I went into HEB and bought the hatch chili chimichurri sauce. Seemed like a good topping on some meats. Came with a free hatch chili ranch dry rub that smelled good.

Guess I'm part of the problem

Just be glad you have a Central Market that's not over an hour away. Not that the same thing isn't happening at HEB however.

I tried a hatch chili for the first time today. I broiled a hamburger patty, added some Cheddar cheese, tomato and mustard, then I roasted the chili and added it.

It doesn't really have much flavor imo.

They're overpriced but we get the pre-made burgers at HEB a lot because they're great for a quick meal on a night that we're busy or don't feel like spending much time in the kitchen. All that to say we got the hatch chili ones this week and they were really good. I still prefer the cowboy bacon ones but the wife loved them.

I bought some too and marinated some pork in it and then made pork kabobs with onion, zucchini, mushrooms and tomatoes. Basted the kabobs with the sauce while it grilled. Damn good.

I buy some fresh ones, then roast, peel and chop as someone described above, but then I measure them out in 1/2c. portions and freeze on a cutting board until firm, then transfer to a baggie so I have (roughly) 4oz of green chiles to go whenever. WAY better than the canned version.

At HEB, I appreciate the Hatch Chile pork, tilapia, little smokies and chorizo this time of year. A friend of mine had some of the hatch chile turkey in the deli and said it was amazing, so that's being added to my list to try this year!
