Never heard of this and can't figure out what you mean. What is this? You just make chili con carne and put it over spaghetti squash with cheese, etc? What's the point of not just making regular enchiladas? Or do you just put chili con carne over spaghetti with no cheese, etc in order to make it healthy?
I like to toss it with some buffalo wing sauce and put a chicken breast on top. It's kind of different but good.
Also if you own an instant pot, it's a game changer on the spaghetti squash front. Just slice it in half crosswise, scoop out the seeds, and put it on high pressure for 7 minutes.
It is a staple around the house. The nice thing is that you can cook it on Sunday and use it till about Wednesday. We do a Yakisoba with it as well as put homemade pasta sauce on it.
