Fried pickle recipe

Bummed that Freddy's removed the fried pickles from their menu. I'm sure they can be made better at home any way, so I humbly turn to the F&S board for their best recipes for fried pickles and dipping sauce. Thank you in advance.

Never had the pickles at Freddy's, but making them at home is pretty simple. Just depends on if you want a wet batter or a dry one. I.e.: how much coating do you want? Want a thick coating, use wet. Thin, then dry.

Dry: Mix together some flour and cornmeal and spices, dredge the pickles and toss them in hot oil.

Wet: Mix together some flour and spices in one bowl and milk and eggs in another bowl, dredge in dry then in wet then in dry again and toss them in hot oil.

An easy comeback sauce is just mayo, ketchup, hot sauce, worcestershire and whatever other spices you want.

I'd say dry. What spices would you recommend? The recipe needs to be kid friendly as well.

Garlic, paprika, pepper. Very little salt, if any.

Just had the best fried pickles in my life at Revival Brews in Evergreen, CO. They were "chicken fried" and I never want to eat fried pickles any other way.

and fried pickles have to be spears!

I like the ones at Stuttgarden in Kemah & Galveston, but that's because of the kind of pickle they use.

Agree that chips produce the right pickle-to-breading ratio.

And if you're looking to kick the heat up some, do half pickle chips and half pickled jalapeno slices.

chips, in addition to being a superior product, are more shareable and require less accounting. spears are the equivalent of getting a few fried whole tortillas with your queso instead of a basket of chips. this is not where we want to be as a society.

That's all slices are// batter and ranch, you're right.

The two best fried pickles in town are Katz' Neva Kloses and Pluckers.. both Spears, no coincidence.

For slices, I lay them out on paper towels, with another row over them. Top with a a cookie sheet, and let them dry for a while. Batter or dusting sticks better.

Reviving for summer '19. Looking to fry some up for July 4th.

Better to batter or dredge? I've only ever done dry. Will a batter yield superior results?

Pluckers are the best.
