Fish is awesome, I love it. If you're trying to get into eating fish the most important thing I'd say is to buy quality fish. Sounds like an oversimplification but it's true. I can do a lot of things to beef, chicken, or pork to get them to taste good if it's not the highest quality. Fish is different though, if you buy bad fish there's not much you can do to improve the end product.
I'm a huge fan of halibut, but it's pricey, tons of recipes out there for salmon, but once again just get as high a quality as you can. Cook it soon too, don't want fish hanging out in your fridge too long. I try to cook fish either same day or the next day. Talk to the guy at the fish counter, pick his brain, ask him what he'd recommend of what he's got in stock.
