My wife would like to purchase me a nice set of steak knives for my birthday. I'm looking for recommendations for commercially available options but would also like to consider custom made knives. I know there may be a wait list if I go the custom route but Im in no hurry. What does the board think?

I got a set of Chicago Cutlery vintage steak knives off eBay, at the recommendation of past Ags, and they've been great!

You could cut my steaks w a butter knife. Crazy to spend $$$ on a knife. Maybe cook a better steak

I think it has to do with how cleanly they cut. straight edge is smoother and nicer.

My wife bought me a few Shun knives for Christmas. Sharpest knifes I have ever used. I will continue to buy the brand.

I think that she bought them from Sur La Table. Let us know what you end up picking.

Perhaps we need to have a steak throw down. You guys can cut your steaks with a rusty spoon, I'll cut mine with a sharp, non-serrated knife!

I got a set of 6 Wusthof Classic Ikon steak knives for my birthday last month. They cut through my steaks like a hot knife through butter. I can't compare them to anything but some cheap, serrated Henkel knives, but I really like them.

Weird. The Williams Sonoma page at the link describes those as serrated in the text, but the picture doesn't look serrated at all, especially compared to the serration of the Laguiole ones in Kenji's serious eats page (he mentions that they sell different types). The laguiole-imports site has three kinds of edges: straight, micro-serrated, and serrated, but their search function doesn't work well for me. MAROON's look straight to me.
