I found an old Mennonite recipe for apple butter that I want to try out. It calls for 4 quarts of apples. How on earth do I measure that? Is that before Coring and slicing, or after? Or is it after coring, but before slicing?

Since they give the measurement and then tell you to slice the apples, it probably means a gallon of apples. Since they have so much water, I don't think it's going to matter how accurately you measure the apples.

8-10 medium sized, peeled, cored, and sliced apples make a quart.

"dark corn syrup" sounds like a shortcut flavor additive because the product would otherwise lack the appropriate color and flavor from natural caramelization.

The recipe clearly specifies it makes a "small amount."

It does, although I wouldn't consider "5 to 6 pints" a small amount.

Clearly we don't have Amish sized families.

I don't think I could afford to feed a family large enough to consider 5 pints of apple butter a small batch.

Sure you could. With 10 sons working the fields and 9 daughters tending the garden it would be easy.

I have a friend with 9 kids.. That makes my head hurt.
