Yep. I usually do steak au poivre, but substitue bourbon for the cognac and add a tbsp or so of freshly grated parmesan.

Or a light drizzle of blackberry/balsamic vinegar reduction.

If you sous vide, one of the best things is getting good beef flavor in a medium rare cook on a cheap cut you wouldn't even consider for a steak otherwise, like chuck.
