Yep. I usually do steak au poivre, but substitue bourbon for the cognac and add a tbsp or so of freshly grated parmesan.
Or a light drizzle of blackberry/balsamic vinegar reduction.

If you sous vide, one of the best things is getting good beef flavor in a medium rare cook on a cheap cut you wouldn't even consider for a steak otherwise, like chuck.phideaux_2003 said:
I don't buy T bones. Hate NY Strip. Filets are great though when done right. No hate here. Just need more than mediocre beef taste most of the time so I prefer ribeyes.
