This is me as well.

For some reason I never thought to make them from scratch....kind of ashamed by that fact.

Probably because the du monde mix is so good! I just made some this morning and if I would have had some chicory coffee I'd have sworn I was in Jackson square.

I've seen 2 major classes of recipes.
  • yeasted doughs like your link. Most online are variations on that
  • baking powder/baking soda leavened ones, which I believe is what the Cafe du Mond mix is.

Paul Prudhomme's is also the second kind

I've never made my own but I was looking into recipes recently while thinking about trying. For those who use the mix: it sounds more like a batter than a dough. Do you do anything to control the shape?

It's a wet dough that's easily rollable on a floured surface to about an 1/8 of an inch, then you just cut it into squares.
