Really good aged cheddar?

Hey guys! I like to get my dad a few nice quality cheese + crackers to go along with his Christmas gift, and apparently this year, he's been searching for good aged cheddars. His favorite right now is the Black Diamond 5 year aged white cheddar, with the little teeny tiny crystallized bits inside. Any recs for some other good, long aged cheddars that might be easy to find in the BCS/Houston area?

Go to Houston Dairymaids. Excellent rotating cheeses and they'll give you free tastings of all their current offerings.

They pretty much only carry small production stuff from Texas as well as other cheesy states.

edit: To answer your initial question, I had picked up some 15yr cheddar for Thanksgiving, and it was fkn awesome.

Thank you! That's even sorta on my way into town! A 15 year aged cheddar sounds amazing and perfect - here's to hoping they have something like that in a couple weeks at Christmas!
