For cutting boards I just use a large cheap plastic one I can replace periodically for raw meats, and a large cheap bamboo board for carving cooked meats, again to be replaced periodically as it gets worn.

We have an epicurean medium size we like for basic other prep work of non meats.

That me cutting boards are a wear and replace item, so we don't spend too much on them.

I've got a Boos Board. Been good for 7ish years I've had it.

It's one of the end-grain type.

Those look bad ass...

I bought a huge sheet of HDPE a few years back and made a bunch of steak plates (i.e. cutting boards). I love the look of butcher block though and may need to upgrade my boards.

Regardless...end grain is better than edge grain.
