How long to keep meat?

I have a pork shoulder in my fridge with a sell by date of 9/13.

Looking to smoke it on 9/16. Still be good by then or should i stick it in the freezer until it's time to defrost?

The smell will let you know very quickly, 3 days over isn't too bad especially still in the vacuum seal.

Yeah, smell. If it doesn't smell like something you'd reasonably eat, then it's not good anymore.

It should be fine.

If it's green, you have a problem. Let it air out before making a judgment to toss though due to smell. Lactic acid will build up in vacuum bags and cause a sour like smell. It will go away though once air hits it. It's a normal thing.
