Pork ribs - absolutely. They turn out great in the oven.

Beef ribs, I'd break out the crocpot/slow coooker. I've followed this recipe more than once for short ribs. If you have a sous vide machine, even better.

This is about what I've done. 1.5-2 hours wrapped in foil, between 250-300F. Pull the foil and broil to finish.

When I do ribs in the oven I throw BBQ out the window and season like a roast. Salt, pepper, garlic, paprika, rosemary, and thyme. I cook in foil for 1.5-2 hours and then turn up the heat to 425 and let brown out of the foil for 10-15 minutes.

You can buy one of those Large Stainless Steel Smoking Wood Chip Hot Smoke Smoker Boxes for a Oven. They work really well and you fill them up with soaked wood chips.

I was inspired by this thread and did oven ribs a couple times recently with satisfactory results.

Oven at 350

Rub ribs
Rub Ingredients (don't use it all)
1/4 cup light brown sugar
1 tablespoon smoked paprika
1 teaspoon ground cayenne pepper
1 teaspoon chili powder
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon ground black pepper

Place ribs in pan, bone side down, and cover with foil

Roast in oven 2.5-3 hrs

Pull, unwrap, brush all over with butter

Place under broiler, around 10 min per side, to brown

Pull and brush with barbecue sauce

Return to broiler, around 3 min per side, to dry sauce some (sauce to a glaze consistency)

Pull and rest 10 minutes

Slice and brush with a little more sauce
