I like sourdough bread that is closer to sour than not... thinking San Francisco. Seldom have I found it retail in Texas. Have a friend ready to start baking it for us, my task is determining/locating high quality starter for her use.

Your advice and insights are appreciated.

Keep in mind the local yeast and bacteria will replace anythijg. So don't buy a starter.

I saw something on the web where someone added yogurt to their initial starter for lactobacillus, but most just use what's already in the flour.

What part of Texas are you in? If near Austin, I've got one that's ~4 years old I'm happy to share - although I won't be in town for a bit.

This is what I started with and it's a great starter. If you want the heavy sour flavor you'll want to do more washing and kicking it up in a warmer area. I like the full sour flavor to be much less so my starter lives in the fridge.

There's also the question of whether my starter has been taken over with a local yeast strain over the last four years. Definitely possible.

Yup.

Just start your own. It's easy. My APW/Rye starter has been going for over a year.
