So my wife has requested brisket for Saturday. I have 3 in the freezer, but normally I would've put one in the frig on Monday or Tuesday to thaw. Will it be safe if I throw it in an ice chest and cover it with water for a few hours? Or should I bite the bullet and go grab a fresh one?

How is it packaged? Is it in a Ziplock bag or vacuum packed? If so drop it some cold water and let thaw.

Just submerge in cold water. Change water after about 6 hours.

I was thinking it was already cooked, my bad.

Stick in the pit frozen and let us know how it turns out.

I just put in on counter in morning and it's good when I get home from work.

This may sound odd but I put big frozen piece of meat on a big griddle and then invert a big cast iron skillet and place it on top. All of that steel seems to wick away the cold pretty quick.

If you have a sous vide, you can use it defrost as well.

hmm. Interesting, that is. Ended up just getting a fresh one. Thanks for the suggestions though!
