Was getting a few groceries and the Kroger man had prime rib on sale. Dinner plans abruptly changed.



Reverse sear on the BGE. 200 degrees to an internal temp of 120, then five minutes at lava to set the crust.

Perfect medium rare edge-to-edge.

Just salt for the smoke, and a little black pepper before setting the crust.

Was about 4 lbs. I think the smoke was about 3 hrs or so and then five minutes or so to sear and 10 minutes rest.
