St. Pats day coming up and the in- laws have volunteered me to make supper. Anyone want to share a recipe for corned beef & cabbage? Particularly interested to see if anyone has done one in a pressure cooker / instant pot.

Don't know about pressure cookers. All I know is:

-fill pot with water and boil
-insert corned beef and seasoning packet
-Wait till tender (seems like much shorter than they tell you on the package)
-About 15 mins before done, throw in cabbage.
-Profit.

If you're really feeling up to it, try this recipe for Luby's Skillet Cabbage:
-Take 6 slices of bacon, chop and brown in a skillet
-Reserve some of the bacon fat in the skillet, add 2 tsp of butter and toss in one diced onion and cook until translucent.
-Add in one diced tomato
-Boil the cabbage and just when it's getting tender, pull it out of the water and rinse in cold water to stop cooking.
-Add boiled cabbage to the skillet and mix together.
-Place in bowl with the bacon sprinkled on top of the cabbage.

I'm curious if I'm feeding 6 adults and 11 kids, how much corned beef should I figure?
