Using a travel trailer as a food truck

I've gone full steam on a low carb lifestyle and have developed some awesome low carb meals. I've actually started selling my low carb chocolate bread and muffins. But now, I've created a dairy free, low carb (28 grams of carbs / quart) ice cream that really does taste amazing and I want to branch out. With the Cottage laws I'm good to sell my baked goods, but ice cream is a different story. That got me thinking to get a travel trailer (thinking a red airstream to match my truck and have a cool eye catching thing) and convert it into a "food truck". What do I need to know, any advice (live in Conroe so will service Houston area)?

I also make low carb flat breads, cauliflower mashed potatoes, etc.

Running hot and "cold" water
Hand washing sink
3 compartment sink
Fresh water tank
Grey water tank that is at least 15% larger than fresh water
Screens on each window/opening
Easy to clean walls, floor, ceiling


After that, all the typical stuff you need to run a commercial kitchen.
