I seem to recall a "standard" book for sausage making named by someone but can't find it via TA search or remember what it is.

Can anyone help me out and give me your favorite book of sausage?

I bought this one years ago but never tried. Well, the one time I did was terrible and not tried since. I am just lazy and buy it now.

Do y'all think there would be any interest in renting a processing facility where you could bring your friends and you could have a guy lead you through the sausage making process, where you cut it up, mix it, stuff it, etc. He'd provide all the materials (equip, casing, seasoning, knives, etc), he'd have various types of sausage there for you to try (polish. German, dried, cheese/jap, stix, summer sausage) and you could bring your own beer.

You end the night by him putting it in the smoker and then he'll package it for you and you pick it up a couple of days later.

I've got a guy in Spring who's thinking about doing it.

I see Great Sausage Recipes and Meat Curing by Rytek Kutas listed as the definitive book on sausage. I have it and have made a few batches from it with success.
