I literally just cooked a goose and ate it, second one in a week. Granted it was a specklebelly which they say taste better than a snow. I spatchcocked it and cooked with direct heat on the BGE. Thermapenned and took out when the breasts were med-rare. Cut off the legs and let them cook a little longer. Fileted the breasts off the bone and sliced into pieces. Just salt pepper and olive oil. Ive flat out had specklebelly cravings for a week.

Cedar Plank Snow Goose

1) Soak the cedar planks overnight in a mixture of 10 parts water to 1 part lemon juice.
2) Get a charcoal fire going good and hot.
3) Take your cedar plank, and rub garlic, red pepper, thyme and sage on the board.
4) Place the goose breast atop the cedar board. Pour a little olive oil on the goose breast.
5) Add more garlic, red pepper, thyme, and sage on the goose breast.
6) Place the board with the goose breast atop the board on the charcoal grill.
7) Cook until the breast is cooked through (I prefer med-well) and there is a slight char on the plank.

To serve, throw the goose away and eat the cedar plank.

Also makes good sausage, treat like venison for this purpose. Will be a different flavor, but still good.
