In light of this poopy weather...Beef stew recipes?

What is your go to stew recipe? I make a very basic one. Cubed beef that I brown, assorted veggies, and then water and tomato sauce for the liquids. Assorted spices by eye.

Got a hankerin to make a big ole pot of stew and would not mind trying something a little different.

I thought about beef and veggie soup/stew but ended up going with New Mexico style posole and flour tortillas. Perfect for this cold, wet day.

Check out Birria recipes here and on internet. Typically goat, also beef or chicken Jalisco style stew. Lots of peppers and spices. Will report back after tomorrow's exploration.

If you want stew but want to mix it up a bit then I recommend trying out a Brunswick Stew.

I use a modified version of this recipe and it turns out fantastic: http://www.foodnetwork.com/recipes/dave-lieberman/red-wine-beef-stew-with-potatoes-and-green-beans-recipe.html

I basically make a sachet with the rosemary and add some thyme, peppercorns, and crushed garlic cloves and throw that in. The sachet keeps the rosemary and thyme leaves from getting all in the stew, as they can be unpleasant. I use yukon gold potatoes and typically cut the green beans up...the picture on that website doesn't make it look very appealing.
