I know someone out there has broken down and come up with an acceptable recipe for Ninfa's la berry sauce. Can anyone post a good start?

A La Barry
Sauteed Mushrooms, JalapeƱos, Tomatoes, Onions and Cilantro in Pechuga Gravy.

My husband Jose worked as a caterer for ninfas on Westheimer st in Houston for 7 years. The chicken in Pechuga was also a favorite of mine. I can tell you exactly what is in it I just dont have the exact measurements. All it takes to make it is a good bottle of Port wine, Butter & half & half cream. Just dont overcook it. Well hope this helps it's really pretty simple.

That doesnt even have berries in it.
I worked at Ninfa's while I was in College. The menu dishes were named after people that worked there and created the dish. This dish was called Chicken Fajitas A La Barry and not berry.Quote:

I cracked the code if anyone is interested.
4 shallots diced
1 stick butter
1 box sliced mushrooms ( I diced the shrooms up more)
Heat in a large skillet medium to high until shrooms and shallots cook down
Add
3 garlic cloves minced
1 tablespoons thyme
3 tablespoons of cumin
Salt and pepper as you like
Cook for 2 minutes stirring often
Sprinkle 1/4 cup of flour all over the mixture
Stir in and cook for 5 minutes stirring often
Your looking for the mixture to begin sticking
to the pan
Deglaze with a 1/2 cup of cheap white wine, or your
Favorite white wine.
Cook to a boil. Constantly mixing
Add
1/2 cup of milk
1/2 beef stock
Cool until thick.
That's it
You're welcome

Anyone here work at Ninfas in college?
Has anyone tried this recipe? 3 TB seems like a lot of cumin. I ate at Ninfa's regularly and loved the Fajitas a la Barry. I don't remember the sauce having cumin in it.JPthaAG said:
