Need BBQ sauce recipe that can translate into like 5 gallons.
Don't want to vinegary like Bill Millers is.

Look up Tony Roma's BBQ Sauce on Google. I use molasses instead of dark corn syrup and add brown sugar to taste. Red wine vinegar or apple cider vinegar tastes better in it, too.

I really like this one. Not too sweet and not too tangy.

2 cups ketchup
1 cup water
1/2 cup apple cider vinegar
5 Tbs. light brown sugar
5 Tbs. sugar
1 tsp. ground black pepper
1/2 Tbs. onion powder
1/2 Tbs. ground mustard
1/2 tsp. garlic powder
1 Tbs. Worcestershire sauce
1 Tbs. lemon juice

Combine all ingredients in a medium saucepan and bring to a boil. Reduce heat and simmer, uncovered, for 75 minutes.

Searching internet, some say liquid smoke.
What do you think on adding just a touch?

Liquid smoke is disgusting. It leaves a horrid oily after taste. Collect some drippings off a brisket as it cooks or finely chop 1/4 cup of the burnt ends and add that to your sauce. Or substitute a little Hickory Smoke Salt for an an equal part regular salt in the recipe.

O.K. I won't use liquid smoke in sauce.
Do you think it is O.K. in marinade for ribs or brisket overnight?

Liquid smoke is like taking toilet water and putting it on your meat. Taboo material. Should be outlawed in Texas.

Are you going to smoke these products after you marinade? If so why do you need the liquid stuff???

...and no, it is never OK to use the stuff.

If you make it yourself it's ok. However, it's a lot of damn work to make yourself.

was just googling the freebird's bbq sauce, and FIDO and I for once agree on something... but since we're on the subject, does anyone have the recipe for Bill Miller's RANCH? I asked my old boss from when I worked there and he swore it was Hidden Valley packets made with buttermilk, but I've tried that and... ew.

I have a recipe that's the best thing ever. It's like a lot of recipes but has a little something you wouldn't expect which makes it incredible. Unfortunately it's a family secret which my great lost twice removed grandcousin made me promise I wouldn't share. So now you know I have a secret recipe that's probably mediocre at best and you just wasted your time reading this. /texags.

Knew a guy in high school that worked there and I asked. He said it's their leftover green bean "juice" and Heinz tomato sauce.

Here's a Bill Miller's BBQ Sauce recipe scaled down to around 1 1/2 cups based on supposed copy cat recipe.

INGREDIENTS
2tablespoons vegetable oil
1onion, finely chopped
1/3 cup chopped celery
1tablespoon minced garlic
1tablespoon paprika
1/2 teaspoon cayenne pepper
3/4 cup ketchup
1/2 cup beer
1/4 cup cider vinegar
1tablespoon Worcestershire sauce

In a medium saucepan, heat oil over medium.
Add onion and celery and saute 5 minutes or until tender.
Add paprika, garlic and cayenne. Saut 1 minute more.

Add ketchup, beer, vinegar and Worcestershire sauce.
Simmer, uncovered, on medium-low until slightly reduced and flavors have blended, about 30 minutes
