Mix sirloin, brisket, chuck, and sometimes bacon.

Edit: I assumed we were talking about grinding our own, so that is my mix.

80/20 is the only way to go; lean=dry, fat=flavor. Salt & pepper and you're good to go. Start adding egg, onion, bell pepper, bread crumbs, worcestershire, etc.= meat loaf. If you want a funky burger, do it with your toppings.

I have a rule.

Cooking for myself/family = cook healthy, lean, very little oil, no butter
cooking for friends/entertaining = don't hold back

I do add a little egg/cracker to hold it together, but just enough to barely hold it together and not impact taste.

Go to Sam's and they sell ground meat in what my son calls log'o meat...it is a log sized package of beef and I think about 10lbs. Cut off the sized portions you want and mash a little flatter and season to taste. We have never ever had trouble with these patties burning, breaking apart or being too greasy.

When making spaghetti sauce or anything with gr meat I use this and have no loss due to shrinkage!

Oh my......where to start....
Walmart Meat......the only way to rollback prices is to cut back on quality. To top it off those "logs" are the worst of the worst....i bet it says "Ground Beef" that means ANY part of the animal......

Sorry Mom I dont think that there is a worse choice of ground meat you can make.......

And keep the crackers for your SOUP - Hamburger meat only needs a few things - Quality Beef(in the right proportions) Salt, Pepper, and ill grind in a touch of butter from time to time.

Like stated save that other crap for Meatloaf.....

I'm a minimalist usually, but just a touch of garlic with the salt and pepper is perfect, IMO.

Bryan Flannery, a butcher out west, has a cool burger builder on his website. I've bought some burgers from this guy before and they were delicious. He's a bit pricey (gotta pay shipping), but it's a great way to splurge or could be a cool gift.

Was not trying to take a shot. Trying to explain.

1) Ground Beef means nothing more than it come from a Bovine....there is a reason why its cheaper.
2) Walmart is great for toilet paper and soap......would not eat ANYTHING that they have a hand in!!!! It BEYOND stupid.....

I was serious, VERY serious, Walmart+the tubed meat....i really dont think there is a worse choice of ground beef......Mom im SERIOUS dont buy that crap, MORE importantly dont eat it!!!!!!

This is up there with "Pork: the other white meat" for me.....

Worst thing besides the Boomers to EVER happen to the meat industry was Walmart deciding to "get involved"

Well I guess its the same argument....

Walmart = the worst mistake/greatest pillar of the Boomers.........

The beauty of "ground chuck" is that it comes from the shoulder area only, unlike "total grind".

Close to placing an order. What blend do you recommend?

I'm thinking 25% each of wagyu chuck, choice short rib, prime brisket and prime brisket fat blend.

Swap out the fat blend or the short rib for some dry aged steak ends, i'd say.
