The same conundrum I have with my 3 Jester King bottles that have just been "aging" for the last half year. Can't pick the appropriate occasion. I don't exactly have a heavy arsenal of top notch stuff.

Do what you wish with your beer, and I seem to post this every 10 pages, but there is no point aging beer you haven't tried fresh. I understand the hesitancy to drink your "big" beers, but trust me, it's better to drink it on a Tuesday than sit on it for 18 months and open something that's over the hill.

If you open that bcbs this weekend, I'll send you two to replace it.

And I don't actually mean I haven't drank them because I'm aging them. I used the quotations around the word to say that while they are aging, the real reason is I don't have the resources to get good stuff like this too frequently, so drinking it means it's gone and there's not much to replace it.

Agreed with NColorado. Sometimes a weeknight is the best occasion. Get more relaxed time and it's a great reward for a good day or few of work.

In the spirit of NCo's post, I opened my 2014 Crooked Stave Sin Frontera. We're putting our house on the market tomorrow, so that seems like a good enough occasion. That's some good ish.

Crooked Stave Sin Frontera. Collaboration with Jester King and Trois Dames. They each used the same recipe and similar barrels. It's pretty amazing.

Which reminds me...I'm driving through Austin on Sunday. Anyone know what time JK opens?

I want to drink more of my beer, especially since wife is no longer preggo and can drink as well. But now with two kids in daycare, I worry I won't be able to replenish what we consume and I'll deplete my stock!

I'm the same way. I've got a handful of barrel-aged stouts that I've been "saving" for one reason or another, mostly because once I drink it, then its gone.
