It is absolutely possible to overcook something in a sous vide. The reason I know this is that I did a 12 hour flank steak at 133, and it fell apart.

I think he's just referring to warming it up. Cooking too long and the collagen falling apart is certainly a risk on long cooks.

This has been the worst ****ing September ever. Its been hot. It hasn't rained much. My bosses fired my counterpart and im doing two jobs. And this has been the longest ive gone between being at a live game in at least 10 years.

Thank God we've gone 4-0 and are stomping people.

Right there with you! Been too damn long since I've been in CS for a game. Sick and tired of house renovations, broken AC Units, and having to do dishes in a bathroom sink every night. I wouldn't be able to deal with this last month if it weren't for the Ags pounding some people into the ground. Let the beer and brisket flow.

I don't know about Asheville since I'm just visiting but they had 6-packs of Allagash White at Publix here in Charlotte also
