Debating on what to use to finish garage cabinets I recently built using birch plywood. I just need something to protect the cabinets from humidity so I dont have to deal with any cupping or warping.

I looked at Shellac however I am getting mixed reviews for how well it protects against humidity. Any recommendations?

Shellac is a one of the best water barriers, but it it difficult to build unless you spray it on. I would do shellac followed by wipe on finish such as poly or another varnish.

If moisture is a concern, you will probably have bigger issues with the end cuts delaminating than the surface warping. Seal/painting those will help some.
