So I've been looking at a ranch type property for a weekend getaway/hunting opportunity and I was wondering what interest rates would be like? I assume they are not as low as home loans.

I assume 20% down would be necessary?
Any help is appreciated!

Farm credit lenders are generally the way to go. Every now and then I'll have a client with a bank they do lot with and they can get close. 3's is range with the various programs they have. 20% down is fairly standard but there are cases where I've had buyers get approved with as little as 10% down . . . I'd count on 20% as average.
