If by car hire:
Canterbury.
Bath.
Southwest England; Cornwall, Devon, Somerset, Dorset.
Oxford.
Cambridge.
Cotswolds.
Cathedrals - Lincoln, Gloucester, Ely, Winchester, Salisbury, etc.
Pubs!

Edinburgh is a great city with lots of interesting sights. If you go, spend AT LEAST two whole days there, but

better three. EasyJet is pretty cheap to fly there most of the time.

I have also heard that Bath is pretty cool to visit, but I haven't been there personally.

We visited York last year and really enjoyed it. It has a walled inner city with lots of pubs and history.

Just visited the Cotswolds, beautiful area...highly recommend spending a few days there if you can swing it.

The Christmas market in Edinburgh around the castle is outstanding but it's not a day trip

We did Bath in late November a couple of years ago. Very easy day trip from London. Lots to see. Christmas market hadn't started.

Did Salisbury last year in December. Also super easy day trip. Cathedral is impressive, but there isn't much else. Christmas market was disappointing.

We've been to York several times, including as a day trip from London many years ago, As others have said, York deserves several days, but it is doable as a day trip.

Oxford or Cambridge are good candidates, too.

Be mindful of winter hours, though. Days are very short, and some attractions will be closed, or have limited hours.
