Short answer is not much, but pretty quickly (sort of.) The time factor is in the fermentation process which depends on what you're making and how you're making it. Could be days, could be weeks. Once you get it to a distillate, it wouldn't take more than a couple of hours to actually do the distillation with this setup.

*to make fuel obviously... using it to make something to drink is illegal obviously, so I wouldn't know about that.

Ok. It just looked like that pot was small using the light switch as a reference, and I wasn't sure how much yield you would get from a pot that size. How much effort is it to change out the contents of the pot and reload it? Is it a quick switch, or is it just like starting the whole process anew?

Well if it's 2.5 gallons or 320 ounces, and let's say your distillate is 15% ABV, that's means there's 48 ounces of alcohol in there. If it's coming out the other end at let's say 60% ABV that means you'll end up with a final product of roughly 80 ounces, which is a little under 2/3 of a gallon. (at 60%, so if you were going to drink it, which again is obviously illegal so you definitely can't do, you'd water it down to about 45% so you'd have about a gallon of whatever it is you're making.) Now that's without discussing cuts and some of the other more complicated stuff that would bring that number down some more.

It should be fairly easy to switch it and reload except it would be hot as hell and cleaning it out while it's hot would be a little difficult.

The bigger issue here, if you're really interested, is that working with distillate in 2.5 gallon batches would probably be more trouble than it's worth unless you're just trying to figure out if you're even interested in doing this sort of thing at all.

Thanks for indulging my curiosity. I have a dozen more questions, but will save them for another time. I have no plans to get into this, but it looks like a cool hobby for someone.

I know NOTHING about booze but...what you do in the privacy of your own home is still your business amiright?
no selling, no blabbering or bragging you could still make "cough medicine" couldn't you? Making a gallon a year for personal experimentation...is that a crime too?

I wouldn't mind having it for a historical novelty and aesthetics only.

Buddy has a similar set up. He makes infused spirits, peach, mango, pineapple, strawberry etc. he cuts to
80 proof. Suprisingly good stuff like a boat drink.

which is ONLY good for distillation of fuel, not consumables.

(Clarifiation: You can go full-bore DISTILLERY but that's a commercial endeavor for the consumer market and, I imagine, extremely costly. You can also get a license/permit to distill ethanol for FUEL on a "home distiller" scale, at little to no cost. That's all that would be reasonable for the 2.5 gal still in this thread.)
